It’s true that performance matters more than looks (at least that’s my opinion!) but this Cuisinart bread maker delivers more than just a nicely baked loaf. It features an attractive, modern design with an embossed logo, and its stainless steel exterior is very easy to keep clean. Easy cleanup is facilitated by a removable lid that lets you make quick work of any spills, plus a flat LCD control panel that doesn’t trap dust or debris.


 “Does gluten-free bread turn out well when made with this machine?”

Yes, it turns out just beautifully. You can use recipes or mixes.

“Is there a display window in the top of the lid?”

Yes, there is a small window that you can look into to see how your bread is coming along.

“Can I add things other than basic ingredients, i.e. seeds, raisins, nuts, or sprouted grains?”

Yes! You can add all kinds of things to your bread dough. There is a special alarm that goes off when it’s time to add extras.

“How long does the rapid baking cycle take?”

The rapid bake cycle takes approximately two hours to complete. Be sure to follow the instructions in the accompanying manual, especially the one re: choosing this cycle for use with rapid rise yeast only. You can modify almost any bread recipe by substituting rapid rise yeast for regular; just be certain that you also change the amount of ingredients so that you’ll get a single 1-1/2 pound loaf. There is no option for choosing a different loaf size when you use this setting.

 “Is the baking pan coated with Teflon, or something else?”

The bread pan is nonstick, but it achieves this effect via Silverstone instead of Teflon. It won’t flake off the way Teflon can, however it can be scratched, which will cause things to stick as time goes by. Never use metal knives, spatulas, etc. to remove bread, and the coating should keep its non-stick characteristic for a long time. If you have a problem with the coating coming off, you can order a replacement pan from the manufacturer’s website.

“Does the CBK-100 come with a cookbook?”

Yes, it does! All of the recipes are easy to follow, and all the ones I’ve tried have been delicious.

“Can you make substitutions with the recipes or use recipes from other sources, or do you have to stick with the ones in the book that comes with the machine?”

You can easily experiment with recipes, use old family favorites, find new ones online, etc. The only thing to watch is yield. If you are using a recipe that’s not designed for use with a bread machine, then you will want to ensure that you use enough ingredients for just a single loaf, and consider comparing those amounts with the ones in recipes for use with bread makers to ensure that you don’t make too much. I made the mistake of blindly following a pumpkin bread recipe that makes two loaves, and ended up with one giant mess! Do note though: any time you experiment with substitutions, i.e. using spelt flour instead of wheat, you run the risk of making a mistake. The results might look funny but will probably taste good, just keep on trying until you get the consistency you prefer.

“Does this bread maker make sourdough bread?”

Yes, you can make sourdough bread with the Cuisinart bread maker. There is a recipe for it in the accompanying booklet, or you can use a recipe that you are already familiar with.

“Does the CBK-100 make horizontal or vertical loaves of bread?”

This bread maker produces horizontal loaves. When you make a 1.5-pound loaf of bread, it measures about 4×6 inches and is about 4 inches high, depending on which recipe you used, of course.

I tried hard to find something not to like about this machine, but in keeping with Cuisinart’s reputation for producing high-quality kitchen appliances, it delivered an outstanding performance each time I used it. The recipes in the accompanying booklet are varied and delicious, with things to try other than just plain homemade bread.
