Breville BBM800XL Bread Maker – Full Review

Zojirushi BB-PAC20-bread-maker

If you love the idea of making homemade bread but have little time for kneading, mixing, and messy wash-ups, then the Breville BBM800XL Custom Loaf is a bread maker worth considering. Complete with an automatic fruit and nut dispenser that makes it simple to add fun ingredients to your loaves, it lets you put flour and other essentials inside, select a setting, and go on with your day. When you return, fresh baked bread is waiting!

A user-friendly bread machine that’s a big step up from old-fashioned basic models, the Breville BBM800XL lets you make a variety of baked goods. Whether you’d like to let the bread maker do all the work – from mixing ingredients to baking bread – or if you’d like to have it mix and proof dough for you to shape into artisanal loaves or rolls, it easily and efficiently delivers.

The Breville Custom Loaf lets you choose between three different crust shades, so bread looks and tastes the way you like it. Additionally, it lets you choose the loaf size that suits you, with options for making loaves between 1 and 2.5 pounds. It offers an impressive menu of 13 automatic and 9 customizable settings, which you can use to make white and wheat bread, gluten-free bread, crusty bread, sweet bread, and more. You can even use it to make fresh homemade jam to go on your bread!

A sturdy blade ensures even mixing, and collapses before baking so that your finished loaf emerges with minimal marking on the bottom. This unique feature sets the Breville BBM800XL apart from most other bread makers on the market, making it ideal for anyone who is bothered by the holes dough blades leave in the bottom of loaves baked inside bread machines. Another unique feature is a light inside the viewing window. This lets you get a good look at how the process is progressing, and it adds some fun to your bread making routine.

Like most other bread makers, the Breville Custom Loaf has a reasonably small footprint, making it a good choice even for modestly sized kitchens. At just under 17 pounds, it’s not too heavy to pick up and store in a cupboard if you prefer to keep your countertops clear. If you’d rather leave your bread maker out for easy access, you’ll be glad to know that this one is very attractive, with clean, contemporary lines and a gleaming stainless steel exterior.

These are just a few highlights. Read on for more details about the pros and cons that come with owning the Breville BBM800XL Custom Loaf bread maker.

Removable Nonstick Baking Pan for Easy Cleanup

Like most bread makers, the Breville BBM800XL has a removable baking pan that allows you to easily extract finished loaves or dough for turning into rolls and other items. The pan pops right out (make sure you use oven mitts if it’s hot!) and cleans up with just a little soap and water. The collapsible paddle remains in place during cleaning. Other reviewers have mentioned that dough and crumbs tend to stick beneath the paddle, however this is something I’ve found is universal for models where the paddle or paddles remain in place. Wiggle gently while washing with a soft cloth, and debris will come right off.

Time Delay

Many of the best bread makers on the market are equipped with a time delay feature, and the Breville Custom Loaf is no exception. This model features a timer you can set as far as 13 hours in advance, allowing you to make fresh baked bread whenever you please, in accordance with your schedule. The LCD display shows how much time is left, in case you’re wondering.

Pause Button

If you want to add an egg wash, melted butter, or other items to the upper crust of your bread during the cycle without interrupting the process in progress, the pause button lets you do it. Just give it a push, take care of your loaf, and then let the bread maker continue its work in progress.

Collapsible Mixing Blade

My thought when I saw this? “Why didn’t anyone think of it sooner?” While I don’t mind the holes that other bread makers leave behind in baked loaves, they drive some people nuts. The Breville BBM800XL addresses the problem with a blade that automatically collapses after the mixing cycle has finished, leaving your loaves with flat bottoms. Breville has also included a fixed blade with the bread maker, so you can use it if you prefer.

Automatic Fruit and Nut Dispenser

Certain breads call for add-ins like fruits, nuts, seeds, cheese, herbs, sprouted grains, and other goodies that make baked goods much more exciting. Like a few other quality breadmakers, the Breville Custom Loaf includes this feature, which dispenses these ingredients at the right time, mixes them into your dough evenly, and continues the bread making process without your intervention.

Loads of Menu Settings

From brownies to wholesome whole wheat bread, the Breville BBM800XL lets you make a wide array of items. Even jams and chutneys are included in the recipe book that comes along with the machine. There are 13 preset options to choose from, along with nine customizable settings you can program yourself to make your favorite recipes or recipe types. Take cake, for example: there’s no preset for this, but you can input a mixing time, any necessary resting or rising time (although most cakes don’t call for it) and a bake time and temperature. Pop the ingredients into the pan and come back when your cake is ready! Some of the Custom Loaf’s menu options include:

  • Basic – good for making a delicious loaf of regular white bread for sandwiches, etc.
  • Whole Wheat – nice for making whole wheat and other whole grain breads, i.e. oat or multigrain
  • Gluten-Free – automatically makes the necessary adjustments for handling gluten-free ingredients, resulting in nice, evenly-textured breads and doughs
  • Crusty Loaf – delivers a crisper, crunchier crust
  • Rapid – works quickly, delivering a finished loaf of bread in about 2 hours
  • Dough –mixes and proofs the dough so you can shape loaves or rolls as needed; also includes special dough settings for pizza and pasta
  • Sweet – great for recipes that use more sugar than regular bread
  • Yeast Free – suitable for unleavened breads or cakes, or for those that use baking powder / baking soda as a leavening agent
  • Jam – Makes jam from fresh, frozen, or canned ingredients. Once jam is cooked, you can store it in the refrigerator or freeze it for later use.
  • Bake only – Mix your dough outside the machine, then pop it in and allow the bread maker to deliver a nicely shaped, perfectly baked loaf

Three Crust Shade Options

Choose from light, medium, or dark settings for a crust that suits your palate. Each setting results in attractive, evenly colored finished results that I’m happy to serve.

Four Loaf Sizes

You can make small or large loaves inside this bread maker. The smallest size is 1 pound, next is 1.5 pounds, then 2 pounds, and then 2.5 pounds. Because the pan is quite large, it’s a good idea to shape small loaves by hand so that they turn out the way you want them to look. The manufacturer did a good job of recognizing that this is something many people might want to do, and built in a beeper that sounds when it’s time for you to shape your small size loaf. If you don’t care, you can just skip through the cycle. The larger loaves turn out beautifully without any interference on your part.

Viewing Light

A viewing light like the one inside your oven or microwave lets you peek in and check bread’s progress. This is a lot of fun, especially if you have curious kids around!

Contemporary Design

The Breville BBM800XL bread maker has a clean, contemporary look, with a stainless steel exterior that is very easy to keep clean. Its control panel is smooth, sleek, and easy to read, and is conveniently located on top of the machine.

Does this bread maker have a yeast dispenser?

No, you place the yeast in with the rest of the ingredients. Be sure to follow the process outlined in the owner’s manual to get the best results.

Can you use recipes that aren’t included with the machine?

Yes! Like most other bread makers, the Breville BBM800XL works with a huge array of recipes. I’d recommend beginning with some of the ones that come in the recipe book (they are all really good!) just to familiarize yourself with the way the bread machine works. After that, feel free to experiment. I have to admit that I’ve made a couple of mistakes this way but I have also made some really nice breads using recipes I’ve heavily modified.

Can you make cookie dough with this Breville bread maker?

Yes, you can mix just about any kind of dough in here. Make sure that you’ve gotten butter to room temperature before adding it, if it’s one of the ingredients in your recipe.

Is an instructional DVD included?

No, not at this time. The user manual is pretty well-written, and the recipes are easy to follow.

Is the machine hot to touch during the baking cycle?

No; the bread maker is well-insulated. It gets warm like other models do, but not hot.

Is the crust evenly baked when the bread comes out of the pan?

Yes, the crust has a nice, uniform look to it.

Is the baking pan dishwasher safe for the top rack?

No, per the manufacturer, the baking pan and paddle should be hand-washed with a soft cloth. Do not submerge the baking pan, just fill it with warm water and a little soap.

Does this bread maker work bread mixes, or do I have to add raw ingredients one by one?

Yes, it works well with a variety of bread mixes including the quick breads that don’t have any yeast.

The Breville BBM800XL does come with a higher price tag than some of the more “basic” bread machines on the market, but its cost is similar to that of other feature rich bread makers. This being said, it delivers excellent value, particularly when you compare the cost of purchase with the cost of buying homemade bread from a bakery every few days – even when you factor in fresh ingredients! It performs very well, which is what I expected as Breville’s appliances have a great track record, and it gets almost completely positive reviews from purchasers. Thanks to a full menu of settings and options, it also delivers variety and convenience, adding up to a completely positive user experience. Attractive enough to leave out on the countertop, it is so easy to operate that you’ll find yourself using it on a regular basis. You can find the Breville BBM800XL Custom Loaf bread maker for sale at online retailers including Amazon.

Happy hunting!
